Description

Tender bites of chicken with a luscious tomato sauce, spaghetti, basil and cheese made in your Instant Pot.


Ingredients

Scale
  • 4 boneless skinless chicken thighs, trimmed of excess fat and cut into 1 inch pieces
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp kosher salt
  • 2 cups chicken broth
  • 1/2 tsp red wine vinegar
  • 8 ounces spaghetti
  • 1 (28 oz) can crushed tomatoes
  • 4 Tbsp butter
  • 2 ounces provolone cheese
  • 1/2 cup parmigiano reggiano cheese
  • 1/4 cup chopped fresh basil

Instructions

  1. Add chicken into Instant Pot. Stir in the garlic powder, onion powder and salt to coat the chicken.
  2. Pour in the broth and vinegar. Break the spaghetti in half and lay it into the pot in a criss cross pattern. Dump the tomatoes on top of the spaghetti. Place butter into the pot.
  3.  Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  4. Stir in the cheeses and basil. Serve and enjoy!
