Bishop’s Casserole

Today’s recipe is a potluck pasta chicken dish that I snagged from Amish 365. The author states, “Potlucks are a pastime among the Amish.  Whether they be for after-church gatherings or other occasions, Amish cooks are quintessential casserole queens…Fix this for your next church outing and you can be guaranteed that it will be a big hit.” I changed up the recipe a bit and transformed it into an Instant Pot recipe. This Instant Pot recipe combines the richness of chicken and mushrooms with the earthy flavor of sage and the nuttiness of Parmesan cheese, all enveloped in a bed of perfectly cooked penne pasta (or egg noodles). I love how this is a one pot meal and it serves a crowd!

Ingredients/Substitution Ideas

  • Butter
  • Mushrooms
  • Water
  • Better than Bouillon chicken base
  • Penne or egg noodles
  • Chopped cooked chicken–rotisserie chicken works well or this recipe
  • Garlic powder
  • Onion powder
  • Kosher salt
  • Black pepper
  • Rubbed sage
  • Chicken gravy–or turkey gravy
  • Sour cream
  • Parmesan cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the mushrooms and saute for 5 minutes.

Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the Better than Bouillon. Turn off Instant Pot.

Sprinkle in the pasta.

Add chicken on top of pasta and sprinkle the chicken with the garlic powder, onion powder, salt, pepper and sage. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes (for penne) or 1 minute (for egg noodles). When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in gravy, sour cream and parmesan cheese. 

Serve and enjoy!

Notes/Tips

  • Serve with a garden salad and olive garden salad dressing.
  • Try scraping the mixture into a 9×13 inch dish, sprinkling with parmesan and baking for 25 minutes at 350 degrees.
  • This recipe makes enough to feed 8 people. You can easily cut the recipe in half. Just halve the ingredients and keep the cooking time the same.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. Halve the recipe in the 3 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.
  • Other recipes you can make with mushrooms are childhood casserole and kansas casserole.

Description

Ingredients

Scale
  • 3 Tbsp butter
  • 8 ounces sliced or chopped mushrooms
  • 4 cups water
  • 2 Tbsp Better than Bouillon chicken base
  • 16 ounces penne or egg noodles
  • 3–4 cups chopped cooked chicken
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3/4 tsp kosher salt
  • 3/4 tsp black pepper
  • 3/4 tsp rubbed sage
  • 3/4 cup chicken or turkey gravy
  • 1/4 cup sour cream
  • 1/2 cup parmesan cheese

    Wow – flavor bomb. Made for myself for Christmas Eve dinner. Personal preference I would increase amount of mushrooms but this was excellent. I think leftovers may be even better. Thank you!

    my dad loved this recipe! I liked it as well. I followed the IP recipe and it turned out terrific. how well does it freeze?

      I think it would freeze just fine! The only thing I would wonder about is the sour cream separating a bit.

      Uhm. YES. My fridge temp is 37 degrees. Stores chicken (and all) leftovers very well for at least 5 days. Sounds like you need a new fridge.

    I would seriously love it if you could please start including Slow Cooker recipes or the instructions for the Instant Pot recipes in Slow cooker. I, like many other people, see a recipe that is a Instant Pot recipe and wonder how to make it in a Slow cooker. Your recipes sound delicious.
