Bierock Casserole–beef and cabbage casserole with cheddar and biscuits. Made with the help of your Instant Pot!

Bierock Casserole
Bierocks are a pastry baked with a savory beef, onion, and cabbage filling and they are delish! This recipe is a spin off of bierocks and has all the yummy flavors but it’s a bit easier because everything is thrown into the Instant Pot. For the pastry part of the dish I just baked up some refrigerated biscuit dough. Easy peasy. We all loved this dish at my house. Enjoy!
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey. I used 93/7.
- Onion–yellow, white, shallot
- Kosher salt
- Black pepper
- Garlic powder
- Beef broth–or water and Better than Bouillon beef base
- Carrot
- Cabbage–I used green cabbage
- Cream cheese
- Refrigerated biscuits or crescent rolls–I used pillsbury
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper and garlic powder.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the carrot and cabbage and top with the cream cheese.

Cover and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. While Instant Pot food is cooking bake the biscuits according to package directions. When time is up on the Instant Pot let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir well so that it is all incorporated. Serve the mixture on top of opened biscuits. I thought I bought pillsbury crescent rolls at the store to serve with this but I accidentally bought a crescent roll sheet. So I just baked the sheet and used that to serve the mixture on.

Notes/Tips
- Serve with fresh fruit like watermelon and some roasted green beans or asparagus.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
