Sort of Aunt Susie’s Casserole
This recipe is adapted for Sort of Aunt Susie’s Casserole on Just a Pinch. The author says, “Aunt Susie just told me the recipe so if anything’s missing I don’t know and don’t care because I could eat this all day long. I added green beans this last time I made it as a replacement for the green bean casserole. yum.” This recipe reminds me a little bit of funeral potatoes, but instead of hash browns you’re using tater tots! I love that you don’t have to cook the tots ahead of time or even thaw them out…just stir everything together and bake. The buttery cornflakes are a fun addition and give it some crunch. Greg and I thought this was a fun twist on a classic hashbrown casserole and it would be perfect for a Sunday dinner or holiday meal.
Ingredients/Substitution Ideas
- Frozen tater tots–use straight from the freezer, no need to thaw
- Cream of mushroom soup–or cream of chicken soup
- Sour cream
- Garlic powder
- Onion powder
- Black pepper
- Shredded cheddar cheese–or Colby Jack
- Cornflakes–or crushed Ritz crackers
- Butter
Steps
Heat oven to 375° F. In a mixing bowl stir together the tots, soup, sour cream, garlic powder, onion powder, black pepper and half of the cheese.


Spread the mixture in a greased 8×8 inch baking dish.

Stir the crushed cornflakes and melted butter together and set aside.

Bake for 30 minutes. Sprinkle the cornflake mixture over the top.

Bake for 20 more minutes. Sprinkle the remaining cheese on top and bake for another couple of minutes until it melts. Serve and enjoy!


Notes/Tips
- Serve with chicken, pork chops or ham. A side of green beans goes great along with it.
- Make this a main dish. Stir in a couple cups of rotisserie chicken.
- A handful of frozen peas, green beans or some chopped broccoli would be good mixed in.
- Store leftovers in an airtight container* in the refrigerator for 4 days.

Slow Cooker Instructions:
- In a mixing bowl stir together the frozen tater tots, soup, sour cream, garlic powder, onion powder, black pepper and half of the cheese.
- Spread the mixture in a greased 2- to 3-quart slow cooker.
- Cover and cook on high for 3–4 hours, or until the tater tots are tender and the mixture is hot and bubbly.
- Sprinkle the remaining cheese over the top. Cover and cook for another 10 minutes, until the cheese melts.
- Meanwhile, melt the butter in a skillet over medium heat. Stir in the crushed cornflakes and cook for 2–3 minutes, stirring frequently, until golden and toasted.
- Sprinkle the buttered cornflakes over the casserole just before serving.
- Serve and enjoy!
