Homestyle Cowboy Beef & Rice Heaven
This is a hearty cowboy meal made fast and easy in the Instant Pot. It’s a great pantry meal since most of the ingredients are things you can easily keep on hand in the pantry, fridge or freezer. The leftovers make great lunch prep for the week and reheat really well. As written it’s pretty family friendly, but if you like spice heat it up with jalapeños, cayenne or pepper Jack cheese!
Ingredients/Substitution Ideas
- Bacon grease or butter–I love the extra smoky flavor from bacon grease, but butter works too.
- Beef smoked sausage–kielbasa, turkey smoked sausage or another fully cooked smoked sausage will work. You can also brown a pound of ground beef and season it with salt and pepper.
- Onion
- Chicken or beef broth–or water and Better than Bouillon.
- Chili powder
- Garlic powder
- Smoked paprika
- Black pepper
- Tomato paste
- Worcestershire sauce
- Converted rice–also called parboiled rice.
- Pork and beans–or ranch style beans.
- Frozen corn–or canned corn, drained.
- Bacon crumbles
- Shredded cheddar–or another type of cheese like Colby Jack, Monterey Jack or pepper Jack would also be delicious.
Steps
Turn Instant Pot to saute setting. When display says HOT add in the bacon grease or butter. Add in the smoked sausage and brown for a couple minutes on each side. Then add in the onions and saute for 3 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Stir in chili powder, garlic powder, smoked paprika, pepper, tomato paste and Worcestershire sauce.
Sprinkle in the rice. Spoon pork and beans and corn over the top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the bacon and cheddar.

Serve and enjoy!

Notes/Tips
- Serve with steamed broccoli, green beans or roasted vegetables. Cornbread would be especially good.
- This is good as is but if you want some toppings try sliced green onions, extra cheddar, sour cream, diced avocado or crushed corn chips.
- Once you add the rice, pork and beans and corn, leave them layered rather than stirring everything together before pressure cooking. This helps prevent the burn error message.
- Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.

- 12 oz beef smoked sausage, sliced into quarter inch rounds
- 1 cup diced onion
- 2 cups chicken or beef broth
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/2 tsp black pepper
- 2 Tbsp tomato paste
- 2 tsp Worcestershire sauce
- 1 1/3 cups converted rice
- 1 (14 oz) can pork and beans
- 1 cup frozen corn
- 1/2 cup bacon crumbles
- 1 cup shredded cheddar
