Description

An Instant Pot dinner made with smoky sausage, pork and beans, corn, bacon and cheddar cheese for an easy meal packed with savory flavor.


Ingredients

  • 2 Tbsp bacon grease or butter
  • 12 oz beef smoked sausage, sliced into quarter inch rounds
  • 1 cup diced onion
  • 2 cups chicken or beef broth
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/2 tsp black pepper
  • 2 Tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 1/3 cups converted rice
  • 1 (14 oz) can pork and beans
  • 1 cup frozen corn
  • 1/2 cup bacon crumbles
  • 1 cup shredded cheddar

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the bacon grease or butter. Add in the smoked sausage and brown for a couple minutes on each side. Then add in the onions and saute for 3 minutes.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Stir in chili powder, garlic powder, smoked paprika, pepper, tomato paste and Worcestershire sauce.
  4. Sprinkle in the rice. Spoon pork and beans and corn over the top.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  6. Stir in the bacon and cheddar.
  7. Serve and enjoy!
