Easy Dolly Parton Casserole

Easy Dolly Parton Casserole

This recipe is adapted from Dolly Parton’s cookbook and is quintessential Dolly. Dolly is known for hospitality and Southern-inspired cooking, and this casserole fits right into that tradition. The homemade cheese sauce has a from-scratch flavor. I also love the combination of cheddar and parmesan to create a richer flavor. Using the Instant Pot to steam the potatoes saves you from having to boil a big pot of water…win! The result is a nostalgic side dish that you’ll love. (This recipe is adapted from Dolly Parton’s au gratin potatoes in her cookbook called Good Lookin’ Cookin’: A Year of Meals – A Lifetime of Family, Friends, and Food*).

Ingredients/Substitution Ideas

  • Russet potatoes–or Yukon Gold potatoes
  • Butter
  • Flour
  • Half and half–or whole milk
  • Black pepper
  • Garlic powder
  • Onion powder
  • Dried parsley–or dried chives
  • Kosher salt
  • Shredded cheddar cheese–or Colby Jack cheese
  • Shredded parmesan cheese–or Romano cheese
  • Ritz crackers–or panko breadcrumbs

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into a steamer basket. Drop the basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid. Remove steamer basket out of pot and set aside. Discard the water.

Heat oven to 350° F. Turn Instant Pot to sauté setting. When display says HOT add in 2 Tbsp of the butter and let it melt. Whisk in the flour and cook for 2 minutes, whisking. Whisk in the half and half and stir until it thickens. Stir in the pepper. garlic powder, onion powder, parsley and salt. 

Turn off the Instant Pot and stir in the cheeses. Fold in the potatoes. Transfer mixture to a 9×9 inch pan. 

Sprinkle the Ritz on top and drizzle the remaining 1 Tbsp of butter over the Ritz. 

Bake for 20 minutes. Serve and enjoy.

Notes/Tips

  • Serve this casserole with baked ham, roast turkey, meatloaf, pork chops or fried chicken. Serve with a side of broccoli, green beans or asparagus.
  • Freshly shred your cheese for the best melting results.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. I used my silicone steamer basket.*
  • If making ahead, assemble the casserole without the cracker topping, refrigerate, then add the crackers and butter just before baking.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze the baked casserole for up to 2 months. Thaw overnight in the refrigerator before reheating.

Ingredients

  • 3 Tbsp butter, divided
  • 2 Tbsp flour
  • 1 cup half and half or milk
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried parsley
  • 3/4 tsp kosher salt
  • 1/4 cup shredded cheddar cheese
  • 1/2 cup shredded parmesan cheese
  • 7 Ritz crackers, crushed

Instructions
