Description

A cheesy potato side dish made with tender potatoes, a homemade cheese sauce, and a buttery Ritz cracker topping that’s perfect for holidays, potlucks, and family dinners. Made with the help of your Instant Pot. 


Ingredients

  • 20 oz Russet potatoes, peeled and sliced into quarter inch rounds
  • 3 Tbsp butter, divided
  • 2 Tbsp flour
  • 1 cup half and half or milk
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried parsley
  • 3/4 tsp kosher salt
  • 1/4 cup shredded cheddar cheese
  • 1/2 cup shredded parmesan cheese
  • 7 Ritz crackers, crushed

Instructions

  1. Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into a steamer basket. Drop the basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid. Remove steamer basket out of pot and set aside. Discard the water.
  2. Heat oven to 350° F. Turn Instant Pot to sauté setting. When display says HOT add in 2 Tbsp of the butter and let it melt. Whisk in the flour and cook for 2 minutes, whisking. Whisk in the half and half and stir until it thickens. Stir in the pepper, garlic powder, onion powder, parsley and salt. 
  3. Turn off the Instant Pot and stir in the cheeses. Fold in the potatoes. Transfer mixture to a 9×9 inch pan. 
  4. Sprinkle the Ritz on top and drizzle the remaining 1 Tbsp of butter over the Ritz. 
  5. Bake for 20 minutes. Serve and enjoy.
