3-Ingredient Taco Chicken
This recipe is ridiculously easy! You literally stir together enchilada sauce and taco seasoning, add the chicken and let the slow cooker do the rest. The chicken turns out super tender and flavorful and the sauce keeps everything juicy instead of dry. This recipe works great for busy weeknights, meal prep or feeding picky eaters because everyone can build their own tacos with their favorite toppings. You can use the shredded chicken in tacos, burrito bowls, quesadillas, nachos or salads. If you want even more flavor, squeeze fresh lime juice over the top before serving or add a little cream cheese at the end for a creamy version.

Notes/Tips
- Serve this chicken in tortillas, taco shells, over rice or on top of salad.
- Chicken tenderloins cook faster and shred very easily while chicken breasts may need the longer cook time listed. You can use frozen chicken breasts but you may need to increase the cooking time slightly.
- For extra flavor add a squeeze of lime juice before serving.
- This recipe is easy to double or triple for feeding a crowd or meal prep.
- This recipe can be gluten free. Just check the label on your taco seasoning and enchilada sauce.
- This recipe is dairy free.
- I used the slow cooker function on my 4 quart Instant Pot*.
- Store leftovers in an airtight container* in the refrigerator for up to4 days. The shredded chicken freezes very well. Let it cool completely and freeze in freezer bags for up to 3 months.

Ingredients
- 1 (10 oz) can red enchilada sauce
- 1 Tbsp taco seasoning
- 20–24 oz of chicken tenderloins or chicken breasts
Instructions
- Add enchilada sauce and taco seasoning into slow cooker and stir. Add in the chicken and spoon the sauce over the top.
- Cover slow cooker and cook on low for 2 hours for tenderloins or 3 hours for chicken breasts.
- Shred chicken, stir it into the sauce and serve in tacos.
