4-Ingredient Hamburger Casserole

4-Ingredient Hamburger Casserole

With only 4 main ingredient (ground beef, potatoes, ranch dressing mix and cheddar) you’ll be surprised at how yummy this dinner is! It comes together very quickly and my whole pot was scraped clean. I had a couple servings myself! I topped mine with a few drops of hot sauce and it really hit the spot. These kind of recipes are perfect for students or camping when you have limited seasonings and ingredients. Enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Dry ranch dressing mix–I like Hidden Valley
  • Broth–or water and Better than Bouillon beef base
  • Russet potatoes–or Yukon Gold potatoes
  • Sharp cheddar cheese–or Colby Jack cheese

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in half of the ranch seasoning mix. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the potatoes. Scatter them into the pot so they aren’t stacked directly on top of each other. Sprinkle the potatoes with the remaining ranch dressing mix. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up you can let the pot sit for 5 minutes and then move valve to venting. Remove the lid. 

Gently fold in the cheddar.

Serve with optional toppings.

Notes/Tips

  • This is good as is but if you want to give it a little more oomph serve with a dollop of sour cream, a few dashes of hot sauce and some diced onions.
  • Some other ideas for serving are adding in some diced pickles and bacon crumbles for a bacon cheeseburger flavor.
  • You can stir in frozen corn or broccoli after pressure cooking for extra vegetables.
  • This recipe is gluten free (just check the ranch dressing mix label).
  • I used my 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze portions for up to 2 months, although the potatoes may soften a bit after thawing.

Ingredients

  • 16 oz lean ground beef
  • 3 Tbsp dry ranch dressing mix, divided
  • 1/2 cup beef broth
  • 24 oz russet potatoes, peeled and sliced into 1/4” rounds
  • 1 cup shredded sharp cheddar
  • Optional for serving: diced green onions, sour cream, hot sauce

Instructions
