With only 4 main ingredients and your Instant Pot this hearty dinner comes together in minutes!

- 16 oz lean ground beef
- 3 Tbsp dry ranch dressing mix, divided
- 1/2 cup beef broth
- 24 oz russet potatoes, peeled and sliced into 1/4" rounds
- 1 cup shredded sharp cheddar
- Optional for serving: diced green onions, sour cream, hot sauce
Instructions
- Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in half of the ranch seasoning mix.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the potatoes. Scatter them into the pot so they aren’t stacked directly on top of each other. Sprinkle the potatoes with the remaining ranch dressing mix.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up you can let the pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Gently fold in the cheddar.
- Serve with optional toppings.
