Description

With only 4 main ingredients and your Instant Pot this hearty dinner comes together in minutes! 


Ingredients

  • 16 oz lean ground beef
  • 3 Tbsp dry ranch dressing mix, divided
  • 1/2 cup beef broth
  • 24 oz russet potatoes, peeled and sliced into 1/4" rounds
  • 1 cup shredded sharp cheddar
  • Optional for serving: diced green onions, sour cream, hot sauce

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in half of the ranch seasoning mix. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the potatoes. Scatter them into the pot so they aren’t stacked directly on top of each other. Sprinkle the potatoes with the remaining ranch dressing mix. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up you can let the pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  5. Gently fold in the cheddar.
  6. Serve with optional toppings.
