Heritage Casserole–a one-pot meal featuring smoked sausage, tender chicken, red potatoes, and bell peppers, perfectly seasoned and cooked in the Instant Pot or slow cooker for an easy, comforting dinner.

Heritage Casserole

Heritage Casserole

This easy one pot meal has tons of flavor from the smoked sausage and the seasonings. Every bite is delicious. You can get creative and add in additional veggies like carrots, mushrooms and spinach. It’s naturally gluten and dairy free too. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil
  • Beef smoked sausage–or kielbasa, andouille
  • Beef or chicken broth–or water and Better than Bouillon
  • Boneless skinless chicken thighs–or chicken tenderloins, breasts
  • Red potatoes–or yukon gold
  • Red bell pepper–or another color bell pepper
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Italian seasoning
  • Paprika

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for about 2-3 minutes on each side. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the chicken thighs, red potatoes and bell peppers. Sprinkle the salt, pepper garlic powder, italian seasoning and paprika into the pot. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir and serve.

Notes/Tips

  • Serve with crusty bread to sop up the sauce. Add in some spinach for some greens.
  • Try adding in some sliced mushrooms when you add in the chicken.
  • Will the bell peppers be too soft after pressure cooking? They do get quite soft. If you prefer a different texture you can quickly sauté the bell peppers in a pan before serving and stir them in at the end for a bit of crunch.
  • Can I thicken the broth to make more of a sauce? Yes. After pressure cooking, mix 1-2 tablespoons of cornstarch with 2 tablespoons of cold water in a small bowl. Turn the Instant Pot to Sauté mode and stir in the slurry. Let it simmer for 1-2 minutes until the sauce thickens.
  • This recipe is gluten free and dairy free.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
  • 1/2 cup beef or chicken broth
  • 20 oz boneless skinless chicken thighs, cut into 1 inch pieces
  • 24 oz red potatoes, cut into 1/2 inch cubes
  • 1 medium red bell pepper, sliced into 1 inch strips
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp italian seasoning
  • 1/2 tsp paprika

Instructions

Slow Cooker Instructions:

  1. Add all ingredients into slow cooker and stir.
  2. Cover and cook on low for 3-4 hours or until potatoes are tender.
  3. Stir and serve.
