Mock Turtle Soup–a savory and slightly tangy soup with ground beef, broth, seasonings and hard boiled eggs. Made in your Instant Pot or slow cooker.

Instant Pot Mock Turtle Soup

Mock Turtle Soup

I got a funny look from my son when he opened the Instant Pot…”Mom! What are those white things in the soup?” It’s just hard boiled egg…and it’s good. Try it, you’ll like it. And indeed he did! And my husband came home and took the rest of the pot down. They both loved the flavor. It’s very unique! It’s got ginger, ketchup, Worcestershire, molasses and lemon that make it so interesting. Next time I make this soup I’ll be bulking it up a bit with carrots, potatoes and mushrooms. Feel free to add in your favorite vegetables too. If you’re looking for something delicious and just a bit different try out mock turtle soup.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7 and didn’t drain any grease
  • Onion
  • Ground ginger
  • Black pepper
  • Kosher salt
  • Beef broth–or water and Better than Bouillon beef base
  • Molasses
  • Ketchup–Heinz is my favorite
  • Worcestershire sauce
  • Lemon slices
  • Hard boiled eggs—I cook them in the Instant Pot

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. The meat should be fine, not clumpy. Use a potato masher, if needed. Add in the onion. Brown for about 5 minutes. If there is excess grease then drain it off. Stir in the ginger, pepper and salt. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Stir in the molasses, ketchup and Worcestershire. Add in the lemon.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Discard the lemon. Stir in the eggs. 

Ladle into bowls and serve.

Notes/Tips

  • The base of the soup is excellent. Next time I will add in some vegetables (mushrooms, carrots and cubed potatoes) to make it a little heartier. Adjust salt and pepper to taste, if needed.
  • This soup can be gluten free if you use gluten free Worcestershire sauce.
  • Serve with French bread, dinner rolls or bread sticks.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Make your hard boiled eggs in the Instant Pot! They are the best and peel so easily. I make 10 at a time and have them in salads or for snacks all week.
  • Other recipes you can make with molasses are Boston Baked Beans and Whole Wheat Bread.

Description

Ingredients

  • 1 pound lean ground beef (I used 93/7 and didn’t drain any grease)
  • 1 cup diced onion
  • 1/2 tsp ground ginger
  • 1/2 tsp black pepper
  • 1/2 tsp kosher salt
  • 3 cups beef broth
  • 1 Tbsp molasses
  • 1/2 cup ketchup
  • 1 1/2 tsp Worcestershire sauce
  • 3 thin slices of lemon
  • 2 hard boiled eggs, finely chopped

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. The meat should be fine, not clumpy. Use a potato masher, if needed. Add in the onion. Brown for about 5 minutes. If there is excess grease then drain it off. Stir in the ginger, pepper and salt. Add to the slow cooker.
  2. Add in the broth, molasses, ketchup and Worcestershire. Add in the lemon.
  3. Cover and cook on low for 4 hours or on high for 2 hours.
  4. Discard the lemon. Stir in the eggs. 
  5. Ladle into bowls and serve.

    I hate ground beef. What can I use instead other than ground bison? I’m sure this is expecting too much but is there a vegetarian version?

      I’m confused. Are you asking about 93/7 ground beef? That just means it is 93% lean and 7% fat.

    This looks really good. I had real turtle soup in New Orleans years ago and it was amazing. But the price of turtle meat is ridiculously high so this looks like a good bet.

      Green turtles can live as long as 70 years, if not more while not reaching sexual maturity until 25 or 30 years. Obviously they’re not sustainable so any price paid is too little. They’re even less sustainable than the Patagonian Toothfish, renamed Chilean Sea Bass to popularize them for diners which mature at about 10 years. I remember reading that sea turtles were captured and kept alive by storing them on their backs in the hold of ships.
