Recipe for Slow Cooker Egg, Spinach and Ham Breakfast Casserole

Recipe for Slow Cooker Egg, Spinach and Ham Breakfast Casserole

For me, this is the best breakfast casserole thing-y I've made in my slow cooker to date.  The seasonings were dead on and the use of the Greek yogurt gives it something a little extra.  I also used pepper jack cheese instead of a usual cheddar.  It gives it a bit of a kick and ups the flavor.
I hope you enjoy this as much as my family and I did!

This looks amazing, and I'd love to get the recipe. I clicked on the "click here for the recipe" link, but it doesn't appear to be working. Help! :)

PS. This is my first time visiting your blog, and I really like it. Gathering LOTS of recipes that I can't wait to try.

  2. Hi, thanks for looking at my site!
Here is the link to the recipe...hopefully you'll be able to find it from there :)

    1. Hi Karen,

Amazing recipe! I am, however, having the same problem, even after clicking into the link you've provided in your reply.

      Thanks for sharing! :)

    2. Weird. I'm not sure why the link isn't working. I can get there just fine. Here is the recipe: Serves: 6
Slow Cooker Time HIGH: 2 hr

      6 large eggs
      1/2 teaspoon salt
      1/4 teaspoon black pepper
      1/4 cup milk
      1/2 cup Greek yogurt
      1/2 teaspoon thyme
      1/2 teaspoon onion powder
      1/2 teaspoon garlic powder
      1/3 cup diced mushrooms
      1 cup (packed) baby spinach
1 cup shredded pepper jack cheese
      1 cup ham, diced

In a bowl, whisk the eggs, salt, pepper, milk, yogurt, thyme, onion powder, garlic powder together until smooth.
Stir in the mushrooms, spinach, cheese, and ham.
Spray KitchenAid® 6-Quart Slow Cooker with non-stick cooking spray.
Pour eggs mixture into the bottom of slow cooker.
Cover and cook on HIGH for 90 minutes-2 hours. Eggs should be set.
Slice and serve for breakfast or dinner.

  3. Can you double this recipe?

    1. Would the cook time need to be doubled as well?

    2. Nope...cooking time should be very similar.

  5. Whoops, I posted this question on another casserole recipe. This is the one I really want to make tomorrow, doubled for a crowd and need to know if it will work cooked on LOW for 3-4 hours rather than HIGH for 1.5-2 hours. Great looking recipes so I'll be sure to post how they taste!

    1. Yes, I think that would work! Good luck!

  6. You advertise an e-Book for $3.99 but I see no way to purchase it. When I click on the book, I am taken directly to Amazon to purchase a spiral bound book. I don't have a problem buying the book, but wanted to spend the $3.99 for an e-Book before investing more money.

    1. Hi, here is the link to where you can buy the book! Hope this helps :)

  7. Can you eliminate the Greek yogurt or is there a substitute?

    1. I wouldn't eliminate it! But I would substitute sour cream if you don't have greek yogurt.
