16 oz jar sliced pepperocini peppers
5 cloves garlic
2 tsp fresh rosemary
2 tsp fresh thyme
Sandwich bread of your choice
Cut 5 small slits in roast, making sure you cut them all around the roast. Place 1 clove of garlic in each slit. Place roast in crockpot. Pour pepperocini's, including the juice, over the roast. Sprinkle rosemary and thyme over the roast. Set crockpot on low and cook 8-10 hours. When it is done, slice roast up for sandwiches. Make sure you put the peppers inside your sandwich. Top with mozzarella.
This was an interesting twist on roast beef sandwiches. I accidentally bought whole pepperocini's instead of sliced, but it was still good. If you like pepperocini's you'll like the flavor of this sandwich. Yum! 3 stars.
