3 lb beef roast
16 oz jar sliced pepperocini peppers
5 cloves garlic
2 tsp fresh rosemary
2 tsp fresh thyme
Sandwich bread of your choice
Mozzarella cheese
Cut 5 small slits in roast, making sure you cut them all around the roast. Place 1 clove of garlic in each slit. Place roast in crockpot. Pour pepperocini’s, including the juice, over the roast. Sprinkle rosemary and thyme over the roast. Set crockpot on low and cook 8-10 hours. When it is done, slice roast up for sandwiches. Make sure you put the peppers inside your sandwich. Top with mozzarella.

This was an interesting twist on roast beef sandwiches. I accidentally bought whole pepperocini’s instead of sliced, but it was still good. If you like pepperocini’s you’ll like the flavor of this sandwich. Yum! 3 stars.

Absolutely LOVED this. Even the pickiest of my picky eaters liked this (without the pepperocini's of course). I also used whole pepperocini's in mine since i couldn't find any sliced ones at the store i was shopping at. Definatelly next time i'll either use more pepperocini's or used sliced, because it was really my favorite part. BTW, they taste GREAT with steak rolls!
