2 lbs of potatoes, cubed
3/4 cup Balsamic Vinaigrette salad dressing, divided (I like Newman’s Own)
1/4 cup Parmesan cheese
1 tsp salt
1/4 tsp pepper
Place potatoes in bottom of 3-4 quart slow cooker. Pour 1/2 cup dressing over potatoes, Parmesan cheese, salt and pepper. Stir until coated well. Cook on low for 8 hours. Make sure to leave enough time for potatoes to get soft. Pour additional 1/4 cup dressing over potatoes and stir right before serving. Add more salt and pepper to taste.

I totally made this recipe up as I went along and I actually was so happy with myself because they turned out great. Greg loved them and ate them until they were gone. We ate ours with grilled salmon and it was a perfect dinner. 4 stars.
