Day 37: Low Fat Chicken Cacciatore

2 lbs uncooked boneless skinless chicken breasts, cubed
1/2 lb fresh mushrooms
1 bell pepper, chopped
1 medium sized onion, chopped
12 oz can low sodium chopped tomatoes
6 oz can low sodium tomato paste
12 oz can low sodium tomato sauce
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper

1. Combine all ingredients in slow cooker.
2. Cover. Cook on low 8 hours.
3. Serve over rice or whole wheat pasta.

Per serving: 200 calories, 3.5 g total fat, 75 mg cholesterol, 500 mg sodium, 10 g total carbohydrate, 30 g protein, 2 g fiber

3 stars. This was a healthy sauce that we served over rice. I think I would like it better over pasta with some parmesan cheese, next time. I liked the mushrooms in it, of course. It made quite a lot, we have quite a bit of leftovers!
