Description
An easy Instant Pot recipe with ground beef, rice, beans, Rotel, cheddar cheese and Fritos.

- 1 pound lean ground beef
- 2 tsp onion powder
- 2 tsp chili powder
- 2 tsp garlic powder
- 1 tsp cumin
- 1 tsp kosher salt
- Pinch of cayenne pepper
- 1/2 tsp black pepper
- 2 cups beef broth
- 1 1/2 cups converted rice
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 (14.5 oz) can petite diced tomatoes
- 1 (4 oz) can diced green chiles
- 1 (10.5 oz) cheddar cheese soup
- Shredded cheddar cheese
- Fritos or Chili Cheese Fritos
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for about 5 minutes. Drain off excess grease. Stir in the onion powder, chili powder, garlic powder, cumin, salt, cayenne and pepper.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Dump the beans, tomatoes, green chiles and soup on top. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting and remove the lid.
- Stir. Serve topped with cheese and Fritos.
