Description

An easy Instant Pot recipe with ground beef, rice, beans, Rotel, cheddar cheese and Fritos. 


Ingredients

Scale
  • 1 pound lean ground beef
  • 2 tsp onion powder
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp kosher salt
  • Pinch of cayenne pepper
  • 1/2 tsp black pepper
  • 2 cups beef broth
  • 1 1/2 cups converted rice
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (4 oz) can diced green chiles
  • 1 (10.5 oz) cheddar cheese soup
  • Shredded cheddar cheese
  • Fritos or Chili Cheese Fritos

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for about 5 minutes. Drain off excess grease. Stir in the onion powder, chili powder, garlic powder, cumin, salt, cayenne and pepper. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice. Dump the beans, tomatoes, green chiles and soup on top. Don’t stir. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting and remove the lid. 
  5. Stir. Serve topped with cheese and Fritos.
