Description

Small pasta shells with chicken and vegetables in a creamy sauce and topped with crispy fried onions. Made fast in your Instant Pot.


Ingredients

  • 2 1/4 cup chicken broth
  • 8 ounces small shells
  • 1 pound boneless skinless chicken thighs, cut into 1/2 inch pieces
  • 2 ounces cream cheese
  • 1 tsp black pepper
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp poultry seasoning
  • 1 (12 oz) package frozen mixed vegetables, cooked according to package directions
  • 1 cup shredded cheddar cheese
  • 1 cup french fried onions

Instructions

  1. Pour broth into Instant Pot. Sprinkle in the shells. Place chicken on top of pasta. Add in the cream cheese, pepper, salt, garlic powder, onion powder and poultry seasoning.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move the valve to venting. Remove the lid.
  3. Stir in the vegetables and half of the cheese.
  4. Sprinkle the french fried onions and the rest of the cheese on top. Let cheese melt (I used my air fryer lid). 
  5. Serve and enjoy!
