Description
Small pasta shells with chicken and vegetables in a creamy sauce and topped with crispy fried onions. Made fast in your Instant Pot.

- 2 1/4 cup chicken broth
- 8 ounces small shells
- 1 pound boneless skinless chicken thighs, cut into 1/2 inch pieces
- 2 ounces cream cheese
- 1 tsp black pepper
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp poultry seasoning
- 1 (12 oz) package frozen mixed vegetables, cooked according to package directions
- 1 cup shredded cheddar cheese
- 1 cup french fried onions
Instructions
- Pour broth into Instant Pot. Sprinkle in the shells. Place chicken on top of pasta. Add in the cream cheese, pepper, salt, garlic powder, onion powder and poultry seasoning.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move the valve to venting. Remove the lid.
- Stir in the vegetables and half of the cheese.
- Sprinkle the french fried onions and the rest of the cheese on top. Let cheese melt (I used my air fryer lid).
