Square Dance Casserole–small pasta shells with chicken and vegetables in a creamy sauce and topped with crispy fried onions. Made fast in your Instant Pot.

Square Dance Casserole
Today’s recipe is a chicken and pasta dish that you can make with what you already have at your house. It’s hearty and filling and you’ll love it for a chilly fall night. This recipe is adapted from Square Dance Casserole on Tastee Recipe.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Small shells–or medium shells, or another short cut pasta like elbow macaroni
- Boneless skinless chicken thighs–or rotisserie chicken
- Cream cheese–or a can of cream of chicken soup
- Black pepper
- Kosher salt
- Garlic powder
- Onion powder
- Poultry seasoning
- Frozen mixed vegetables–or another bag of frozen veg you like, you can also leave out the vegetables
- Cheddar cheese
- French fried onions–like the kind you put on top of green bean casserole
Steps
Pour broth into Instant Pot. Sprinkle in the shells.

Place chicken on top of pasta. Add in the cream cheese, pepper, salt, garlic powder, onion powder and poultry seasoning.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move the valve to venting. Remove the lid.

Stir in the vegetables and half of the cheese.

Sprinkle the french fried onions and the rest of the cheese on top. Let cheese melt (I used my air fryer lid).

Serve and enjoy!

Notes/Tips
- Serve with fresh fruit or a green salad.
- I used my Duo Crisp 6 quart Instant Pot* (so I could use the air fryer lid to crisp up the top and melt the cheese). You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. The top is best the first day because it is crispy.

- 1 pound boneless skinless chicken thighs, cut into 1/2 inch pieces
- 2 ounces cream cheese
- 1 tsp black pepper
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp poultry seasoning
- 1 (12 oz) package frozen mixed vegetables, cooked according to package directions
- 1 cup shredded cheddar cheese
- 1 cup french fried onions
