Social Media Casserole–an Instant Pot recipe with thick noodles and tender bites of chicken enveloped in a creamy ranch sauce with bacon and cheddar. So good you’ll want to share it on social media!

Social Media Casserole

This is one of those recipes that you’ll want to share with all your friends in real life and on social media! It’s super luscious and addicting. With bacon, ranch, cream cheese, chicken, cheddar and noodles it’s got all the bases covered. Comforting–check! Easy to make–check! Flavorful–check! I think you’re really going to love this one.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Old fashioned wide egg noodles–I used Mrs. Miller’s brand
  • Boneless skinless chicken thighs–or chicken breasts
  • Hidden Valley ranch dressing mix–I buy the big container at Costco but you can also just buy one packet
  • Black pepper
  • Cream cheese
  • Sour cream
  • Bacon–I cooked mine in the air fryer
  • Chives–or diced green onion
  • Sharp cheddar cheese–I used Tilamook

Steps

Pour broth into Instant Pot. Add in the noodles and then the lay the chicken on top of the noodles evenly. Sprinkle the chicken with ranch mix and the pepper. Place cream cheese into the pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 

Stir in the sour cream, bacon, chives and cheddar.

Serve and enjoy!

Notes/Tips

  • Serve with a green salad and garlic bread. You can also stir in some cooked broccoli.
  • Love mushrooms? Try adding in some sliced mushrooms when you add in the chicken.
  • Love tomatoes? Dice up some fresh tomatoes and sprinkle on the top of each portion.
  • Bacon lover? Fry up extra bacon and and sprinkle over the top of each serving.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with bacon are loaded baked potato soup and Elvis Presley meatballs.

A shareable Instant Pot recipe with thick noodles and tender bites of chicken enveloped in a creamy ranch sauce with bacon and cheddar.


Ingredients

Scale
  • 2 cups chicken broth
  • 8 ounces old fashioned wide egg noodles (I used Mrs. Miller’s brand)
  • 20 ounces boneless skinless chicken thighs, cut into 1/2 inch cubes
  • 3 Tbsp dry Hidden Valley ranch dressing mix
  • Pinch of black pepper
  • 3 ounces cream cheese
  • 1/2 cup sour cream
  • 3 strips of bacon, fried and crumbled (I cooked mine in the air fryer)
  • 1 Tbsp chives
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Pour broth into Instant Pot. Add in the noodles and then the lay the chicken on top of the noodles evenly. Sprinkle the chicken with ranch mix and the pepper. Place cream cheese into the pot.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  3. Stir in the sour cream, bacon, chives and cheddar.
  4. Serve and enjoy!

    Anyone know how to adapt the Social Media casserole to the Slow Cooker or another way?
