Easy Recipe for Slow Cooker Hawaiian Chicken

This recipe for slow cooker Hawaiian chicken is super simple to make.  The chicken is super moist and the sauce is slightly sweet…but not overly sweet.  Maybe this Hawaiian chicken will transport us for a moment or two to a tropical location.  This time of year, I’ll take all the tropical moments I can get!  My whole family enjoys this meal…enjoy!

Makes 4 servings
Ideal slow cooker size:  4 quart
Cooking time:  4-6 hours on low

6 boneless, skinless chicken thighs, trimmed
1/4 cup flour
1 (20 oz) can pineapple rings, juice reserved
1/4 cup soy sauce
1 Tbsp Worcestershire sauce
1/4 cup brown sugar
1 Tbsp lemon juice
1 tsp garlic powder
1 Tbsp quick cooking tapioca
1 Tbsp apple cider vinegar
1 green bell pepper, diced (optional)

1.  Dredge the chicken thighs in the flour and place in the slow cooker.
2.  Combine 1/2 cup of the reserved pineapple juice, soy sauce,  Worcestershire sauce, brown sugar, lemon juice, garlic powder, tapioca and apple cider vinegar.  Pour over the chicken. 
3.  Top the chicken and sauce with the pineapple rings.
4.  Cover and cook on LOW for 4-6 hours.  Add in the green pepper and cook for another 30 minutes on HIGH (without lid).
5.  Serve over rice.

    Sounds very good. I’m not a smart cooker. Is the 4 cups of soy sauce right and 4 cups of brown sugar and 4 cups of flour?

      No, it is a quarter cup of soy sauce, brown sugar and flour (ยผ cup)

      Hi Shelley, I think you could freezer it! I personally haven't tried it. I think the pineapple might be weird if you froze it but the chicken would be fine ๐Ÿ™‚

      tapioca is just a thickener. You could just add in some cornstarch instead.

      yes, it won't be as tender but you can use chicken breasts.

    Made this last night! Served with jasmine rice and peapods. SO amazing! Absolutely delicious. Cooked on High for 3 hours and turned out perfect. Boyfriend has asked that this make it into the regular rotation.

    What section of the store would I find tapioca? (I've never used it before…) Would the recipe work without it? This sounds tasty, I'll have to try it soon!

      It's by the jello/gelatin. It's just a thickener. The recipe will work but it will be a little runny. Good luck!
