Description

Shredded chicken with a creamy, flavorful sauce that’s made in your slow cooker. An easy dinner for any night of the week.


Ingredients

  • 1 cup chicken broth
  • 2 pounds boneless, skinless chicken breasts (frozen or thawed)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup picante sauce or salsa
  • 1 tsp cajun seasoning
  • 1/2 tsp dried parsley
  • 1/8 tsp dried dill weed
  • 1/8 tsp cumin
  • 1 fresh lime, cut into wedges

Instructions

  1. Pour chicken broth into slow cooker. Add in the chicken. Cover and cook on low for 3-4 hours for thawed chicken and 5-6 hours for frozen chicken.
  2. Remove the chicken and discard the broth. Shred the chicken and add it back into the slow cooker.
  3. In a bowl stir together the mayo, sour cream, picante sauce, cajun seasoning, parsley, dill and cumin. Stir the sauce into the chicken.
  4. Squeeze one lime wedge over each serving of chicken. You can serve this chicken over rice, on buns or in lettuce wraps.
