Slow Cooker Crustless Spinach Quiche

I bet you didn’t know you could make quiche in the slow cooker. I like to make crustless quiche for a healthier, gluten free alternative. It tastes amazing for brunch or sometimes I make this as a “breakfast for dinner.” I like to use fresh spinach in this recipe to give it a pop of color and some extra nutrition.

Slow Cooker Crustless Spinach Quiche

Ingredients

Units Scale
  • 4 eggs
  • 1 cup half and half
  • 1/2 tsp salt
  • Ground pepper to taste
  • 1/2 cup Sargento® Shredded 4 Cheese Mexican
  • 1/2 cup Sargento® Shredded Sharp Cheddar Cheese
  • 3 cups washed spinach
  • 2 cups cubed ham

Instructions

  1. Spray slow cooker with non-stick cooking spray.
  2. In a bowl beat the eggs. Then add in the half and half, salt, pepper, cheeses, spinach and ham. Stir. Pour mixture into the bottom of the slow cooker.
  3. Cover and cook on HIGH for 3 hours, or on LOW for 5 hours.
  4. Slice the quiche and serve.

Notes

Ideal slow cooker size: 6 quart oval or 3 quart casserole slow cooker

    made this yesterday Monday june 24th cooked in about 1 hour and 15 mins on high but, it taste more like a ham and cheese omelet nothing close to quiche good but not what I’m looking for MB

    made this for breakfast for the week as meal prep so I doubled the recipe i did 4 hours on low and then 2 hrs on high then cooked and stored. It’s very good and easy!

      I haven’t doubled it but I bet you could. Add 30-60 minutes to the cooking time.

      It’s a product that is half whole milk and half cream. You can use whole milk or cream instead.

    I did a 10 egg spinach and cheddar cheese.. not sure if it is done.. been cooking on low for about 4-5 hours How can I tell if it is done

    We double this recipe with dried spinach. Added a bit of onion powder and garlic. The only comment was there wasn’t enough.
