Both of these recipes are kind of cinderella teams to me (kind of like VCU vs Butler last night).  I didn’t expect them to be here.  But I’m happy they are.  Jennifer, how did this unexpected game go down?

Picante Sauce Chicken:
With only 4 ingredients, Pace Picante Sauce Chicken was a breeze to make, especially since I didn’t have to thaw the chicken. It was very cost friendly and quick to put together, I had all the ingredients on hand. Everyone ate it and seemed to enjoy it, even my 3 yr old cleaned her plate. However, to be honest with you I think my husband’s Spanish rice that we served with it really made the dish. The sauce was also very runny. The dish alone, I don’t think I would make again. I have other chicken taco recipes that my family likes more.

Chicken and Mushrooms:
Even though this recipe had a few more steps to take, it was not too time consuming. The value was pretty good for this meal. I had everything on hand to make this recipe. However, more ingredients and mushrooms make this meal cost a bit more. Everyone ate this and enjoyed it. My husband was a bit on the fence, but only because he’s not a big mushroom fan and I only used half the mushrooms required, which was my only change to the recipe. The only thing that bothered me about this recipe was opening an entire can of tomato paste and evaporated milk to only use a small portion of it. I really liked this dish, in fact I think I will be including it in our recipe rotation, substituting it for other chicken and mushroom recipes I usually fall back on. I loved the mushrooms and really liked that you don’t use cream of mushroom soup. The flavor is lovely and makes a nice switch up for a chicken and rice meal. We will most definitely be eating this again.
