Creamy Wild Rice and Chicken Soup:
So good. Even the rice is creamy after cooking all day. This is serious comfort food. Too bad it was 90 degrees outside, because this would be fabulous on a cold or rainy evening. With the white sauce, it reminds me of the flavor of a chicken and dumpling soup. It was super cheap to make. I think it would work well with a cheaper piece of bone-in chicken too, since you pull them out to shred anyway. This was everyone’s favorite…but barely. Each person I asked had a hard time picking one over the other.
Cashew Chicken:
It smelled so good, we almost finished the entire pot before I remembered to take a picture! It was fairly easy – just one step away from dumping everything in. The flavor was excellent. Everyone ate it. The kids asked for more. It was also super cheap, less than $1 per serving. I would double this next time because I love me some leftovers. This may be my new go-to slow cooker rice recipe. I really mourn that this one didn’t win, because I loved it too. Good game, cashew chicken. Tough call. It was a heartbreaker.
Shannon, I agree with you. I am mourning the loss of my beloved cashew chicken. I was thinking/hoping it would go all the way. But they played a good game and all we can ask for is honesty from our families. So the creamy chicken and wild rice soup goes all the way to the FINAL FOUR! Way to go.
I made the cashew chicken over and over last year and loved it.. Too much of a good thing… I got tired of it.
Now I want some more of it! Searched for the recipe and … It says “Do not use chicken breasts… Use thighs!” I missed that part last year. Breasts are all I ever buy. Why not breasts? Am I missing out on something even tastier?
I have everything, including 2 frozen breasts. I’ll not cook this until I hear from you. This recipe is soooooo delicious! Thanks for sharing it.
Hi, thanks for your question! You CAN use breasts but chicken thighs turn out soooo much more tender and moist. The crockpot slow and low cooking is best suited for chicken on the bone or chicken thighs because they have enough collagen and fat. Whereas chicken breasts tend to get dried out. Good luck!
