Description

This Cafe Rio-style dressing is so addictive and tastes awesome for up to a week!
 

Ingredients

Units Scale
  • 1 package Hidden Valley Buttermilk Ranch mix
  • 1 cup buttermilk
  • 1 cup mayo
  • 2 tomatillos (peel outer skin layer)
  • 1 clove minced garlic (1 tsp of pre-packaged stuff)
  • 1/3 bunch cilantro, chopped
  • 1/2 tsp lime juice
  • 1 small jalapeno (seeds removed)

Instructions

Place all ingredients into a blender. Blend until smooth and refrigerate.

    Hi Karen,
    Just made this tonight for fajitas. Outstanding. I scoured my cupboard for my buttermilk powder but didn’t have any! So I substituted heavy cream. I used 1/2C of full fat mayo & 1/2C of Miracle Whip Light. Came out great!! Thank you. Hubby loved it & scarfed it down. That’s always a plus!

    In terms of tablespoons/cups, how much would you estimate are used for the jalapeno and cilantro? I find that sizes of peppers and (especially) bunches of cilantro vary wildly from store visit to store visit, and since I’ve never made anything like this in the past and we don’t have this restaurant where I live in Southern California, I’d love to have the best shot of being somewhat close to correct when I do take the time to make it. I’m also going to do the Sandy Stephens thing of subbing out half the mayo (I’ll use Kraft Light) for nonfat Greek yogurt and will start with using low-fat buttermilk in the amount indicated to use a lower number of my WW points for the day on a nice dollop of dressing. If anyone has a lower point value idea for the buttermilk that you’ve tried and found successful, I would love for you to reply to the comment and share what you’ve done that tastes great but is less point-heavy. I love cilantro, tomatillos, and limes, so I predict this is going to be a winner in my book!
    PS – If you ever decide to work on perfecting a WW-friendly version of this dressing, Karen,I bet loads of people would LOVE to know about it. 🙂

      Hi Michelle, I like a lot of cilantro so I buy one big bunch of it. I don’t chop it up before putting it in the blender so I am not sure how many cups it is. As for the jalapeno I use the smallest one I can find so that it has a little kick and not too spicy. Hope this helps!

    Karen, this looks so good! Can you substitute 1/2 of the mayo for Greek yogurt to cut down on some of the fat? Thanks and really enjoy all your instant pot recipes

      Yes you can. I’ve tried all greek yogurt once and it was not good. But maybe half mayo half yogurt would be okay.
