Description

Tomato based cabbage soup with only 56 calories per serving! You can make this in the Instant Pot or the Crockpot.


Ingredients

Scale
  • 3 1/2 cups chicken broth
  • 3 1/2 cups V8 juice
  • 1 1/2 pounds chopped or sliced cabbage
  • 1/2 tsp black pepper
  • 2 tsp sugar
  • 2 Tbsp red wine vinegar
  • 2 Tbsp lemon juice
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • Optional for serving: sour cream and raisins

Instructions

Instant Pot Instructions:

  1. Add broth and V8 to Instant Pot. Then add in the cabbage, pepper, sugar, vinegar, lemon juice, salt and garlic powder.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes.  When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  3. Stir. Ladle into bowls and if desired serve with a dollop of sour cream and a few raisins. 

Slow Cooker Instructions:

  1. Add broth, V8, cabbage, pepper, sugar, vinegar, lemon juice, salt and garlic powder into slow cooker.
  2. Cover and cook on low for 6 hours or on high for 3-4 hours.
  3. Stir. Ladle into bowls and if desired serve with a dollop of sour cream and a few raisins.
