Description
Tomato based cabbage soup with only 56 calories per serving! You can make this in the Instant Pot or the Crockpot.
Ingredients

- 3 1/2 cups chicken broth
- 3 1/2 cups V8 juice
- 1 1/2 pounds chopped or sliced cabbage
- 1/2 tsp black pepper
- 2 tsp sugar
- 2 Tbsp red wine vinegar
- 2 Tbsp lemon juice
- 1 tsp kosher salt
- 1 tsp garlic powder
- Optional for serving: sour cream and raisins
Instructions
Instant Pot Instructions:
- Add broth and V8 to Instant Pot. Then add in the cabbage, pepper, sugar, vinegar, lemon juice, salt and garlic powder.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir. Ladle into bowls and if desired serve with a dollop of sour cream and a few raisins.
Slow Cooker Instructions:
- Add broth, V8, cabbage, pepper, sugar, vinegar, lemon juice, salt and garlic powder into slow cooker.
- Cover and cook on low for 6 hours or on high for 3-4 hours.
- Stir. Ladle into bowls and if desired serve with a dollop of sour cream and a few raisins.
