Description

Disney World’s cheesy scalloped potatoes made fast in your Instant Pot.


Ingredients

Scale
  • 1 1/4 pounds red potatoes, sliced into quarter inch rounds
  • 1 Tbsp butter
  • 1/4 cup diced onion
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheddar cheese
  • 2 Tbsp parmesan
  • 1 cup heavy cream
  • 1 Tbsp cornstarch

Instructions

  1. Pour 1 ½ cups water into bottom of Instant Pot. Place potatoes into steamer basket* and place basket in bottom of Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute on high pressure. When time is up move valve to venting and remove the lid.  
  2. Discard liquid and dry out the pot. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and saute until softened. 
  3. Stir in the cream, salt, pepper, cheddar and parmesan. 
  4. In a small bowl stir cornstarch together with 1 Tbsp of cold water and then stir the slurry into the pot to thicken the sauce. Once sauce has thickened turn off Instant Pot.
  5. Fold in the potatoes. 
  6. Serve and enjoy!
