Montana Happy Casserole–tender egg noodles coated in a creamy lemon-parmesan sauce, all cooked together in the Instant Pot for an easy weeknight meal.

Montana Happy Casserole

This dinner came together so fast. It’s an easy dump and go pasta dinner…I love using the Instant Pot for pasta because there’s no waiting for water to boil on the stove and no draining pasta. The lemon adds a fresh pop of flavor. The thick egg noodles have the perfect amount of bite to them. They’re worth hunting down at the store. I kept it meatless this time, but you could definitely add chicken if you want. Enjoy! (This recipe is adapted from The BEST Creamy Baked Lemon Noodles Recipe on Montana Happy).

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon, or vegetable broth
  • Mrs. Miller’s Wide Egg Noodles–if you use regular egg noodles then only use a 1 minute cook time
  • Butter
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Fresh lemon juice
  • Lemon zest
  • Parmesan cheese–or gruyere
  • Sour cream–or greek yogurt
  • Dried parsley–or dill

Steps

Pour broth into Instant Pot. Sprinkle in the noodles. Place butter on top. Sprinkle the salt, pepper and garlic powder into the pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the lemon juice, lemon zest, parmesan, sour cream and parsley. 

Serve and enjoy!

Notes/Tips

  • Serve with steam or roasted broccoli.
  • Can I add protein? Yes! Diced cooked chicken, rotisserie chicken, or even shrimp would be perfect stirred in at the end.
  • What if I don’t have Mrs. Miller’s wide egg noodles? Use regular egg noodles, but note that cooking times will only be 1 minute with a 5-10 minute natural pressure release.
  • Try adding in sliced mushrooms. Add in 4 ounces on top of the noodles before pressure cooking.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 2 cups chicken broth
  • 8 oz Mrs. Miller’s Wide Egg Noodles
  • 2 Tbsp butter
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup fresh lemon juice
  • Zest from one lemon
  • 1/2 cup shredded parmesan cheese
  • 1/3 cup sour cream
  • 1/2 tsp dried parsley

    If I add raw chopped chicken would my cook time be the same?

      I wonder the same thing…can we add cut up chicken? This recipe sounds delicious but would like to add some protein.

      Yes same cook time, should be great. The chicken will put off more liquid so it may be a little soupier
