March Madness Results: Soups

Let’s take a look at some more results from our soup category.  First up two different types of taco soup, a definite go-to meal in my home.  Stacey was our volunteer who cooked these two up.

Stacey writes, “Loved the chicken taco soup! I loved not cooking the meat before, you just throw the raw chicken in. The avocado was a fun new twist to taco soup, and the flavor was great! It was really easy to put together and I had most of the ingredients on hand. The only thing that I would change is I would add an additional can of beans and a can of corn to bulk it up a little and make it go further. I will be making this again.

Can Can Taco Soup

The Can Can Taco Soup was really convenient to make because I had most of the ingredients in my pantry. It scored lower on the prep time because if you choose to add beef to it, that adds another step to cook the beef. I liked the thickness of the soup, but the overall flavor tasted like a bunch of canned goods (to be expected because thatโ€™s what it is). Both recipes were very affordable. I would go to my other taco soup recipes before making this one again.”


The next two soups were also an interesting match up… Cream of Mushroom vs Nacho Cheese Soup, two of my faves.

Holly was the lucky gal that got to try these two soups.  This is what she had to say, “I was worried at the beginning, that my kids
would not like the Nacho Soup. I am so glad I was wrong! The flavors and all
the ingredients meshed well together. (Karen, donโ€™t be mad, but I added some
cinnamon to soup. Cinnamon is my go to secret ingredient when I cook!)
I took out the can of chilies, because I had a can
of diced tomatoes with green chilies.
I upped the heat and cooked it on high for approx. 4
hours.
Nacho Soup
I would suggest that mild salsa is used when feeding this to younger
kids. I put hot and my 6 year old would have liked it better if I had toned
down the salsa hotness.
The Cream of Mushroom soup also turned out better than expected. I do
think that it needed more spice to it. I did add to cloves of garlic in with
the onions and butter.
My family wouldnโ€™t eat it as a soup, so I improvised and made fettuccine
and topped the noodles with the mushroom soup. It was a big hit with the kids
and husband.

So the Busy Day Taco Soup and the Cream of Mushroom will face-off in round 2 of the tournament.  Stay tuned to see who wins!
