This Instant Pot Shredded BBQ Cream Cheese Chicken “recipe” (if you can even call it that) is so super easy. But even though it’s so easy, I have a feeling you and your family are really going to love it. It’s only 3 total ingredients and takes a total of 21 minutes.
First you’ll add a cup of water to your Instant Pot and then add in 2 pounds of chicken. Set the timer for 12 minutes and let it cook. After the chicken is all cooked you’ll drain off all the liquid and shred the chicken, stir in some cream cheese (yum) and a bit of barbecue sauce. This chicken is so addictive. I loved it! I wrapped my chicken up in a whole wheat tortilla, sprinkled with bleu cheese crumbles and topped with spinach. Random but delicious!

For this Instant Pot Shredded BBQ Cream Cheese Chicken recipe I used this Instant Pot IP-LUX60 V3 Programmable Electric Pressure Cooker. It’s 6 quarts, so the same size as most slow cookers. It cost me around $80 on Amazon.

This was SO good, but even better the next day! I used 1/2 recipe. Next time I will double the chicken and water, use 3/4 Cup BBQ Sauce, and 6 oz. cream cheese.
I love when leftovers are better!
Very easy and very good. I sprinkled the chicken with Montreal chicken seasoning and saved the broth for another use. Instead of doing a QR, I let it stand for 5 minutes before releasing the pressure. It was good served in hamburger buns.
Thanks for sharing your experience! It sounds awesome!

New to the pressure cooker.. do I preheat it until it reaches the correct temperature or does the 12 minutes take into account the preheating time?
No need to preheat.
My sister is a nurse with a heart condition. She sometimes replaces cream cheese with Greek Yogurt. Nothing is going to taste as good as the cream cheese but will Greek Yogurt work?
yes I’m sure it would!
So delicious! I added some McCormick Brown Sugar Bourbon seasoning to my chicken!

If the chicken is thawed how long do you cook it in the Instant Pot?
I’d say 12 minutes (same) for thick breasts and 10 minutes for thin breasts.
What about frozen chicken breast
I would like to use 4 chicken breasts. Is that still 12 minutes and 1 c. of water? Thanks!
Apologize, please disregard. I read too quickly and thought it said 2 chicken breasts instead of 2 pounds! Can’t wait to try this!!
Question. I’m new to using the Instant Pot, so If I only want to do one pound of chicken, would I still cook for the 12 minutes, or cut the time down?
yes, 12 minutes would be perfect for a pound of chicken!
Using the slow cooker method; can’t wait to serve this rolled up in tortillas for supper tonight — gotta love an easy-peasy 3 ingredient recipe that I know is going to turn out capital ‘D’ Delicious!
