I love EASY recipes in the slow cooker like this recipe for Shredded BBQ Chicken. It only has 5 ingredients that you may already have in your house! I usually even throw the chicken in frozen (the sauce may be a bit runny since the ice crystals will melt). The chicken turns out perfectly tender and shreddable. Serve the chicken on slider buns, in a salad or on pizza!
Shredded BBQ Chicken
Makes 4 servings
Ideal slow cooker size: 3 quart
Cooking time 4-6 hours
8 boneless, skinless chicken thighs
1/4 cup Italian dressing
1 Tbsp Dijon mustard
1 cup prepared barbecue sauce
Garlic powder, to taste
1. Combine the dressing, mustard, and BBQ sauce together.
2. Place chicken in bottom of slow cooker.
3. Top with the sauce.
4. Cover and cook on LOW for 4-6 hours. Tear chicken apart with 2 forks or use your mixer* to shred. Add in garlic powder to taste.
5. Serve shredded chicken on sandwiches, salads, or on pizza.
*Kitchen Tip: Use your stand mixer to shred meat
You can use two forks to shred chicken, beef or pork or you can do it the easy way and use your stand mixer. After the meat is cooked through and fork tender, carefully remove it from the slow cooker with tongs and place in the bowl of your stand mixer fitted with the paddle attachment. Turn the mixer to low for about 45 seconds. It should be shredded perfectly. Use the meat right away or store in plastic freezer bags for meals at a later time.

I have a question about this step in the recipe: 1/2 cup Shirley J BBQ mix stirred together with 1/2 cup water (or 1 cup of any other prepared barbecue sauce)
I'm assuming it's 1/2 cup Shirley J BBQ mix AND 1/2 cup of water
OR
1 cup prepared BBQ sauce
It was a bit ambiguous. I thought you COULD have meant 1/2 cup Shirley J's AND 1 cup prepared BBQ sauce (in lieu of 1/2 cup of water).
