Description

Smoked sausage, mushrooms, tomatoes, rice and parmesan cheese cooked quickly in your pressure cooker. This meal is loaded with flavor and is a dump and go one pot meal.


Ingredients

  • 1 (12 oz) package pre-cooked rope smoked sausage, sliced into quarter inch slices
  • 1 cup uncooked converted/parboiled rice (read rice section above for other types of rice)
  • 1 1/2 cups water
  • 8 oz package of white mushrooms, quartered
  • 1 (14.5) oz can diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup shredded parmesan cheese

Instructions

  1. Add sausage into pot in an even layer. Sprinkle in the rice evenly. Pour the water into the pot. Layer the mushrooms and tomatoes over the top. Sprinkle in the garlic powder, onion powder, parsley, oregano, salt and pepper. Don’t stir.
  2. Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes (for other types of rice see times and water to rice ratios in the green chart above). When time is up let the pot sit for 10 minutes. Move the valve to venting. Remove the lid. 
  3. Stir the contents of the pot. Scoop onto serving dishes and sprinkle each dish with 1 Tbsp of parmesan cheese.
