Description

A quick and easy dinner made with fresh red potatoes, ground beef, ranch dressing mix and grated cheese. A simple meat and potatoes meal!


Ingredients

Scale
  • 1 pound lean ground beef
  • 2 Tbsp minced dried onion or 1 cup diced onion
  • Pinch of pepper
  • 4 Tbsp dry ranch dressing mix, divided
  • 1 cup beef broth
  • 1 1/2 pounds red potatoes, washed and cubed
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese

Instructions

  1. Turn Instant Pot to sauté setting. When displays says HOT add in the beef and break it up. Add in the onion. Brown the beef for about 4-5 minutes. Drain off excess grease. 
  2. Stir in the pepper and 2 Tbsp of the ranch dressing mix. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Add the potatoes into the pot. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  5. Add in the remaining 2 Tbsp of ranch dressing mix. Gently stir. Fold in the cheeses and let melt. Scoop onto plates and serve.
