Description
A fast and easy version of the Scottish chicken, leek and rice soup. You can make this in your electric pressure cooker or your slow cooker.
Ingredients
- 4 leeks, clean and sliced into quarter inch slices (see note)
- 3 cups cooked and chopped rotisserie chicken (see note)
- 4 medium carrots, peeled and cut into half inch pieces
- 2 bay leaves
- 1/2 cup uncooked long grain white rice
- 1 teaspoon poultry seasoning
- 3/4 teaspoon kosher salt
- 1 Tbsp minced onions
- 1/2 teaspoon black pepper
- 8 cups chicken broth
Instructions
Instant Pot Instructions:
- Add all ingredients into Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 3 minutes. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Discard the bay leaves. Stir well. Ladle into bowls and serve.
Slow Cooker Instructions:
- Add all ingredients into slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, or until rice and carrots are cooked. If you are using the slow cooker function on your Instant Pot then use the “more” setting.
- Discard the bay leaves. Stir well. Ladle into bowls and serve.
Notes
How to prepare and clean leeks: With a sharp knife, remove the dark green leaf end and discard. Thinly slice the leek into rings and discard the root end. Submerge the sliced leeks in a bowl of cold water. Give them a gentle stir or shake to remove any soil or grit between the layers. Allow the leeks to sit in the water for a few minutes. Then scoop them into a colander using your hands or a slotted spoon. Rinse with cool water tossing as you rinse.
I cooked a whole chicken in the Instant Pot and chopped it up for this recipe and a casserole recipe. It works great for meal prep! You can also buy a rotisserie chicken for a great price at Costco. They even have the rotisserie chicken meat chopped and packaged now. Another option is to make my favorite seasoned shredded chicken.
Original cock-a-leekie soup has prunes in it. I opted out of the prunes. But you can add 4 ounces of pitted and chopped prunes, if you’d like.
