Instant Pot Cajun Chicken, Sausage and Cabbage

Description

Bites of chicken and smoked sausage with potatoes, onions and cabbage flavored with cajun seasoning.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 (12 oz) package smoked sausage, sliced into rounds
  • 1 cup diced or sliced onions
  • 1 Tbsp minced garlic
  • 1/2 cup chicken broth
  • 2 boneless skinless chicken thighs, cut into bite size pieces (or 1 1/2 cups chopped, cooked chicken)
  • 4 cups chopped cabbage
  • 2 tsp cajun seasoning
  • 2 medium Russet potatoes, peeled and cut into cubes

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the olive oil and smoked sausage. Brown the sausage for 3 minutes. Add in the onions and saute for 3 minutes. Add in the garlic and saute for 30 seconds. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the chicken and cabbage and sprinkle with the cajun seasoning. 
  4. Finally add in the potatoes on top of the cabbage.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. Stir. Scoop onto plates or in bowls and serve.
