Description

Chicken and vegetables in a light balsamic sauce. Prep it in 5 minutes and cook it in your pressure cooker in 2 minutes! A fast, easy and healthy dinner!


Ingredients

Scale
  • 3/4 cup Newman’s Own Balsamic Vinegar Salad Dressing
  • 1/4 cup water
  • 23 cups rotisserie chicken
  • 1 (12 oz) bag frozen California vegetables (the mix with broccoli, cauliflower and carrots)

Instructions

  1. Pour dressing and water into Instant Pot.
  2. Add in the chicken and vegetables.
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting either immediately or within 5 minutes. Remove the lid.
  4. Stir. Serve and enjoy! (We stirred some leftover rice in with ours to soak up the juices.)
