Description
Chicken and vegetables in a light balsamic sauce. Prep it in 5 minutes and cook it in your pressure cooker in 2 minutes! A fast, easy and healthy dinner!

- 3/4 cup Newman’s Own Balsamic Vinegar Salad Dressing
- 1/4 cup water
- 2–3 cups rotisserie chicken
- 1 (12 oz) bag frozen California vegetables (the mix with broccoli, cauliflower and carrots)
Instructions
- Pour dressing and water into Instant Pot.
- Add in the chicken and vegetables.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting either immediately or within 5 minutes. Remove the lid.
- Stir. Serve and enjoy! (We stirred some leftover rice in with ours to soak up the juices.)
