Description
An easy Instant Pot dinner with seasoned ground beef, tender potatoes, melted cheddar cheese, pickles, tomatoes and a creamy homemade burger sauce.
Ingredients

- 16 oz ground beef
- 1 small onion, diced
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp mustard powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 cup beef broth
- 20 oz Russet potatoes, peeled and cut into 1/2 inch cubes
- 1/2 cup shredded cheddar cheese
- Diced pickles and tomatoes, for topping
Burger Sauce:
- 1/4 cup mayonnaise
- 1 Tbsp ketchup
- 1 1/2 tsp yellow mustard
- 1 Tbsp dill pickle juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp paprika
Instructions
- Turn Instant Pot to the sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, garlic powder, onion powder, mustard powder, paprika and pepper.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the potatoes. Add a pinch of kosher salt over the potatoes.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up let pot sit for 2 minutes and then move valve to venting. Remove the lid.
- Make the burger sauce by whisking all ingredients in a small bowl.
- Stir gently. Scoop mixture into four bowls. Top each bowl with cheese, pickles and tomatoes.
- Drizzle with a little burger sauce.
