Tender chicken thighs simmered in a rich, sweet and savory soy-ginger sauce, perfect for an easy, slow cooker dinner.
Ingredients

- 1 cup water
- 2/3 cup low sodium soy sauce
- 2/3 cup brown sugar
- 4 green onions, sliced
- 5 garlic cloves, minced
- 2 Tbsp minced gingerroot
- 6 boneless skinless chicken thighs (fresh or frozen)
Instructions
- Add water, soy sauce, brown sugar, onions, garlic and ginger to slow cooker and whisk.
- Nestle the chicken into the sauce.
- Cover and cook on low for 1 hour. Flip over and cook on low for 2 more hours.
- Break chicken apart and serve chicken and sauce over hot cooked rice.
