Description

An easy skillet shrimp dish loaded with colorful peppers, mushrooms, and green onions simmered in a buttery, garlicky sauce.


Ingredients

Scale
  • 4 Tbsp butter
  • 1 green bell pepper, cored and diced
  • 1 red bell pepper, cored and diced
  • 4 green onions, sliced
  • 8 oz sliced mushrooms
  • 20 oz raw shrimp (peeled, deveined, tail off)
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • Dash of crushed red pepper
  • 2 1/2 Tbsp flour
  • 1 cup chicken broth

Instructions

  1. Heat a large skillet over medium high heat. Add in the butter and let it melt. Add in the peppers, onions and mushrooms. Sauté for about 5 minutes.
  2. Stir in the shrimp and toss until it starts to turn pink.
  3. Stir in the salt, pepper, garlic powder and red pepper.
  4. Toss in the flour and stir. Pour in the broth and stir until the sauce thickens. 
  5. Serve with corn muffins or over rice. 

Notes

You can this with cubed chicken instead of shrimp. Use 20 oz of cubed chicken breast. Raw or cooked both work.
