Day 89: Slow Cooker Updated Chicken Cordon Bleu

8 small boneless, skinless chicken breasts
1 tsp salt
1/8 tsp pepper
1 tsp dried thyme leaves
8 thin slices of ham
1 onion, chopped
4 garlic cloves, minced
1 (16 oz) jar Alfredo sauce
1 (10 oz) can cream of chicken soup
2 cups shredded Swiss cheese

Sprinkle chicken breasts with salt, pepper, and thyme. Wrap a slice of ham around each breast and secure with toothpicks. Place onion and garlic in a 5 to 6 quart slow cooker. Top with wrapped chicken breasts. In medium bowl, combine remaining ingredients. Pour into slow cooker. Cover and cook on LOW for 5-7 hours or until chicken is thoroughly cooked. Serve with rice. Makes 8 servings.

Review:

Instead of being stuffed with ham and cheese like traditional cordon bleu, the chicken is just wrapped in ham and served with a cheese sauce. This dish had GREAT flavor. The mixture of alfredo, swiss cheese, chicken soup, and ham tasted so good. I will definitely make this again. This is a good one for Sunday dinners. 5 stars.

    I got a slow cooker for Christmas and only use it to keep soups warm. I'm looking forward to finding some new recipes on here to make my life a little easier. I think I'll start with this one.

    We liked this recipe pretty well, but for some reason bought alfredo sauce always has a wierd flavor to me. Not that I've ever made it from scratch, but I've had it in restaurants and it's divine. 😉 But anyway, I'd give it 3 stars….we liked it but wonder if we could improve the sauce. Regardless, we enjoyed it! Thanks!

    This was good, I thought it was a little salty and I put it in before work so I think it cooked to long. The chicken just fell apart(that was ok) but it tasted alittle mushy, and my sauce could have been thicker. I will try again.

    My husband made this for me last night for Mother’s day dinner…and we thought it was good, but not 5 stars. The alfredo swiss cheese combo wasn’t exactly what I expected, but we still liked it and I look forward to the leftovers today for lunch. Thanks!
