Day 278: Chocolate Chip Pumpkin Bars in the Slow Cooker

Happy Halloween everyone! Here is a fun pumpkin recipe for your little trick-or-treaters.

Serves 8-10

1 can pumpkin (the smaller sized can)
1 spice cake mix
1 1/2 – 2 cups chocolate chips

Mix all three ingredients together. Spray a 6 quart slow cooker with cooking spray. Place batter into slow cooker and spread out. Cook on low for 1-2 hours, until edges are pulled away from the side and a toothpick comes out clean from the middle.

Review:
I usually make these into cookies in the oven and they are the easiest, best pumpkin cookies ever. They turned out great in the crockpot as well. I brought them to Sunday dinner and they were literally gone within about 4 minutes! I love that there is no butter or oil in this recipe. 4 stars.

    I make this exact same recipe as Pumpkin Muffins! It is a Favorite at Our house! I use the mini chocolate chips and add a little bit of unsweetened apple sauce, so that the batter is not quite so thick. Then, I use my med. cookie scoop to scoop into mini muffin pans. I end up with 60 mini muffins that disappear off the cooling racks so fast that I wonder if I only imagined making pumkin muffins that day! 😉

    It's the exact same recipe as above…but you just form into balls on a cookie sheet and cook for 8-10 minutes at 350…they are the best and sooo easy!

    Hi Karen: Beth in our office made this yummy dish in her crock pot today. Superb! I want to try making this in cookie form in the oven and add walnuts to it. Do I need to add any more moisture to the recipe, or will it be fine as is. I'm guessing 350 degrees for 10-12 minutes? Thanks for the luscious blog! Ruth
