1 head of cauliflower
water
butter and salt and pepper to taste
Cut up cauliflower into good size pieces. Place in slow cooker. Cover entirely with water. Cover and cook on low for 6 hours. Drain water. Use a hand mixer to create smooth and creamy mashed potato-like texture. Use butter and salt and pepper to season. Serve in the place of mashed potatoes.

I saw a tip on the Biggest Loser to make mashed potatoes out of cauliflower and therefore, save a lot of calories and get your veggies in. I decided to see if I could make them in the slow cooker. It worked great. The veggies got so tender after slow cooking all day that they were easy to “mash.” I like this idea and will use it in the future for a healthy option. 3 stars.
this is really excellent with a little bit of dry ranch mix. It tastes just like mashed potatoes.
