Makes 6 servings
2 lbs beef stew meat
4 celery ribs, sliced
6 carrots, sliced
6 potatoes, cubed
1 onion, chopped
1 (28 oz) can diced tomatoes, with juice
1/4 cup minute tapioca
1 tsp salt
1/4 tsp pepper
1/2 tsp dried basil or oregano
1 garlic clove, pressed or minced
Comine beef, celery, carrots, potatoes, onion, tomatoes, tapioca, garlic and salt in slow cooker. Cover and cook on LOW 8-10 hours. Add in pepper and basil and stir and serve.

I again halfed this recipe. I only cooked it for 4 hours. I also used by fancy-shmancy new bosch food processor to cut up the celery, carrots, and potatoes. There are a million different versions of this stew. It all tastes pretty much the same. I think it is perfect for a cold, winter day. Serve with warm cornbread and then curl up with a blanket and good book!
I love this one, but the lazy cook in me goes one step further. I don't always love rooting through my spices. I substitute the canned tomatoes for a V-8. Gives it great flavor, and it's easier.

I have a really good stew recipe from my french sister-in-law. She adds 1/4 cup molasses. It is REALLY good. (When you get to an egg recipe, I’ll give you my sister the chef’s secret ingredient….)
You also need peas in a stew! They are my favorite part. I add them after the stew is served, so I don’t “contaminate” my kids bowls……(and they don’t get mushy).

You are a brave woman. I don’t think I could make it through a year without some quick fixes like hot dogs or pizza. However I will stay tuned since I could use a few good recipes.
