Day 182: Thai Peanut Noodles

Serves 4

12 oz. linguine or spaghetti, cooked
2 garlic cloves
2/3 c. chunky peanut butter
1 c. chicken bouillon
1 lb boneless, skinless chicken breasts or thighs, cut into 1 inch cubes
1 c. shredded zucchini
1/3 c. soy sauce
1-2 tsp sugar
1 Tbsp quick cooking tapioca
Peanuts, for garnish
Cilantro, for garnish
(I also added red bell pepper into mine…totally optional)

1.  Add garlic, peanut butter, bouillon, chicken, zucchini, soy sauce, tapioca and sugar to a 3 quart crockpot.
2.  Cover and cook on LOW for 3-5 hours, until chicken is tender (breasts will cook quicker than the thighs).
3.  Stir until smooth. Serve over pasta. Garnish with peanuts and cilantro, if desired.


Review:
For all of you out there that have a garden full of zucchini that are as big as baseball bats, this recipe is for you! It is a traditional recipe that I adapted to the slow cooker. I must say that I completely prefer making it in the slow cooker. It is so much easier and turns out just as well! I love this recipe and give it 4 1/2 star! Excellent flavor.

    I just made this tonight for dinner, so delicious! My 4 year old and 20 month old enjoyed it as well! I served with rice noodles. I also will add grated carrots and a little green onion next time I make it.

    We had this for dinner a couple of weeks ago and loved it! So much flavor and yet its much healthier for you than the thai peanut dishes you can order at a restaurant. I loved that there is grated zucchini hidden inside! My husband didn't even know he was eating veggies! I'm going to grate some carrots and add them in with the zucchini next time. I'll say 4.5 stars, too!

    is that one cube of bullion? Or one cup of water with 1 cube of bullion? I'm assuming it's not one cup of bullion because that's a whole lot of bullion.

    I used uncooked. It cooked fine in 4 hours. If you want to use cooked that would work too.

    Is the chicken cooked or uncooked when you put it in the crockpot? I am assuming cooked based on the fact that you only cook it for 4 hrs on low, but thought I would ask for clarification.
