Dangit Casserole

We swung up to our cabin for spring break and I inevitably always forget a few food items. Dangit! I was going to make a different recipe for dinner but realized I had not brought all the ingredients. The store is far and expensive so I just decided to improvise with what I had on hand to create dinner. This is what I came up with and it actually was pretty dang good. Skyler came home from a 10 mile run and scooped up a bowl and said, “dang! this is good!” So I guess it was a happy mistake. Also, running 10 miles probably is a good way to make most dinners taste really good 😉

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Celery–or a green pepper
  • Garlic powder
  • Onion soup mix–I use Lipton’s brand
  • Water
  • Converted rice–or long grain white, basmati, jasmine
  • Tamari–or low sodium soy sauce

Steps

Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the celery, garlic powder and onion soup mix. Brown for about 5 minutes. 

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice and press down a bit to submerge but don’t stir. Pour in the soy sauce. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 

Stir. Serve and enjoy!

Notes/Tips

  • Serve with green beans, a green salad, roasted broccoli or a fruit salad.
  • Try adding in one shredded carrot or a green bell pepper instead of the celery.
  • This recipe can be gluten free if you use a gluten free tamari/soy sauce and onion soup mix.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. This recipe is easy to double or triple. Keep the same cooking time.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 1 pound lean ground beef
  • 1 rib of celery, sliced
  • 1 tsp garlic powder
  • 1 (1 oz) envelope onion soup mix
  • 1 1/2 cups water
  • 1 cup converted rice
  • 1 Tbsp Tamari or low sodium soy sauce

    Can̈’ most in̈stant pot recipes be converted to crackpot? I f so, directions would be greatly appreciated Thanksm

      If there is a good way to make it in the crockpot I will include in the instructions in the recipe card. If not, I don’t. Not all IP recipes are good candidates for the slow cooker unfortunately.
