Creamy Tuscan Garlic Tortellini Soup

We’re up at the cabin this week for spring break with Skyler, his two friends, Reagan, one of her friends, and of course me and Greg. It still feels a little like winter up here, snow dusting the pine trees and everything looking so peaceful and pretty. Honestly, it feels more like Christmas break than spring break, and I am loving it! It’s giving all the cozy vibes with blankets, puzzles, and lots of good food. This soup was absolutely perfect for that kind of setting. I ladled it into bowls after the boys got back from sledding. Smiles all around. YUM!

Ingredients/Substitution Ideas

  • Butter–or olive oil
  • Onion–or shallot
  • Celery
  • Garlic
  • Chicken broth–or water and Better than Bouillon chicken base
  • Carrots
  • Crushed tomatoes
  • Italian seasoning
  • Kosher salt
  • Black pepper
  • Brown sugar–or honey
  • Boneless skinless chicken thighs–or chicken breasts
  • White beans
  • Tomato basil pesto–or chopped sundried tomatoes
  • Kale–or spinach
  • Frozen tortellini–or refrigerated tortellini
  • Evaporated milk–or half and half (tempered)
  • Parmesan cheese–or pecorino romano

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and celery and saute for 4 minutes. Add in the garlic and saute for 30 seconds.

Pour in the broth and scrape bottom of pot so that nothing is sticking

Add in carrots, tomatoes, Italian seasoning, salt, pepper, brown sugar and chicken.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button (or low pressure) to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the white beans, pesto, kale and tortellini. Turn Instant Pot to saute setting and heat until tortellini are warmed through. Turn off Instant Pot.

Stir in the evaporated milk and parmesan cheese.

Ladle into bowls and serve.

Notes/Tips

  • Serve with bread sticks, french bread, green salad, etc
  • You can swap in rotisserie chicken—just skip pressure cooking the chicken and stir it in with the tortellini step.
  • Chop all your veggies ahead of time to make this truly a quick, weeknight-friendly meal.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. This soup can be frozen, but for best texture, freeze it before adding the tortellini and dairy. Add those fresh when reheating.

Description

An Instant Pot or slow cooker soup loaded with tender chicken, cheesy tortellini, kale, parmesan cheese and a rich tomato broth.


Ingredients

Scale
  • 2 Tbsp butter
  • 1 cup diced onion
  • 1 rib celery, sliced or diced
  • 2 Tbsp minced garlic
  • 4 cups chicken broth
  • 2 carrots, peeled and diced
  • 1 (28 oz) can crushed tomatoes
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp brown sugar
  • 24 oz boneless skinless chicken thighs, trimmed of excess fat and cut into bite size pieces
  • 1 (15 oz) can white beans, rinsed and drained
  • 2 Tbsp tomato basil pesto (or 2 Tbsp chopped sundried tomatoes)
  • 1 cup chopped kale
  • 16 oz frozen tortellini
  • 1 cup evaporated milk
  • 1/2 cup shredded parmesan cheese

Instructions

    Planning soup for supper tomorrow… this is definitely on the menu! Naive, newbie question…. what are some ideas to replace the white beans? No beans please! Thanks so much! 😋 👩‍🍳 🇨🇦

      You can definitely make it without beans! I’d suggest adding cubed potatoes or a handful of pasta to keep it hearty. Hope you love it! 😊
