Description

A super fast and easy dump and go Instant Pot recipe that uses the meat from a Costco rotisserie chicken. With noodles, chicken, cheese, ranch dressing mix and bacon it has tons of flavor and is a family favorite.


Ingredients

Scale
  • 4 cups chicken broth
  • 1 (16 oz) package cavatappi pasta (you can also use penne)
  • 3 Tbsp dry ranch dressing mix
  • Meat from 1 rotisserie chicken, shredded
  • 1 (10.5 oz) can cream of chicken soup (or two cans if you want it extra creamy)
  • 1 (3 oz) package real bacon bits
  • 2 cups shredded monterey jack cheese
  • 3 green onions, chopped

Instructions

  1. Dump chicken broth and pasta into Instant Pot. Sprinkle the ranch on top. Dump the chicken and cream of chicken soup on top. Don’t stir. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  3. Stir well. Stir in the bacon, cheese and onions. 
  4. Scoop onto plates and serve.
